Jicama Chipotle Salad
with Queso Fresco

Preparation Time:  approximately 10 minutes

Serving Size: 1 cup, Serves approximately 4



1 cup diced fresh mango

1 tablespoon olive oil

1 tablespoon chipotle sauce

1 clove garlic

2 teaspoons sherry vinegar


1/2 cup queso fresco or mozzarella cheese

3 cups chopped fresh romaine heads, washed

1/2 jicama, peeled and cut into thin sticks

1 cup mango, thinly sliced

1/2 small red onion, thinly sliced


1. To prepare vinaigrette: place mango, oil, chipotle sauce, garlic and vinegar into a blender; puree for about 30 seconds or until well blended.

2. In a medium bowl, gently toss lettuce, jicama, mango, onion and cheese with prepared vinaigrette.

3. Place a high mound of salad in center of each plate.
